4 boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-2 fresh red chili peppers, chopped (adjust for spice level)

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1 teaspoon paprika

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs, lime juice, salt, pepper, and half of the cumin and paprika. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Incorporate the minced garlic, grated ginger, and chopped chili peppers, cooking for an additional 2-3 minutes until fragrant.
