8 ounces of noodles (lo mein or udon preferred)

4 cloves of garlic, minced

2 tablespoons of vegetable oil

1 teaspoon of sesame oil

2 tablespoons of soy sauce

1 tablespoon of chili garlic sauce (adjust to taste)

1 tablespoon of rice vinegar

1 teaspoon of sugar

1/2 teaspoon of red pepper flakes (optional for extra heat)

2 green onions, chopped

1 teaspoon of sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions

Cook the Noodles: Start by boiling water in a pot. Add the noodles and cook according to package instructions until al dente. Drain and set aside, reserving a cup of noodle water.

    Prepare the Sauce: In a small bowl, mix together soy sauce, chili garlic sauce, rice vinegar, sugar, and red pepper flakes. Set this sauce aside.

      Sauté Garlic: In a large skillet or wok, heat the vegetable oil and sesame oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Combine Ingredients: Add the cooked noodles to the skillet and pour the sauce mixture over them. Toss everything together using tongs or chopsticks. If the noodles seem dry, add a little reserved noodle water to reach desired consistency.
