Ingredients

4 boneless, skinless chicken breasts

3 tablespoons olive oil

2 tablespoons fresh lime juice

4 jalapenos, thinly sliced (adjust based on spice preference)

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a bowl, combine olive oil, lime juice, minced garlic, cumin, smoked paprika, onion powder, chili powder, salt, and pepper. Mix well to create a marinade. Add the chicken breasts and ensure they are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Grill/Pan: Preheat your grill or heat a large skillet over medium-high heat. Lightly grease the grill or skillet to prevent sticking.

Cook the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill or sear the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. During the last few minutes of cooking, add the sliced jalapenos to the grill/pan to char slightly.

Rest and Serve: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. This helps the juices redistribute. Slice the chicken and garnish with charred jalapenos and chopped cilantro. Serve with lime wedges on the side.

Enjoy: Pair this spicy jalapeno chicken with steamed rice, tortillas, or a fresh salad for a complete meal.
