Ingredients

4 cups chicken or vegetable broth

2 tablespoons miso paste (choose either red or white for your preference)

1 tablespoon sesame oil

2 cloves of garlic, finely minced

inch piece of fresh ginger, grated

1 tablespoon gochujang (Korean chili paste)

1 tablespoon soy sauce (low-sodium preferred)

2 servings of either fresh or dried ramen noodles

1 cup sliced shiitake mushrooms

1 cup baby spinach leaves

2 green onions, finely chopped

2 soft-boiled eggs (for an extra touch, optional)

1 tablespoon nori strips (toasted seaweed)

Sesame seeds for garnish

Instructions

Begin by heating the sesame oil in a large pot over medium heat. Once hot, add the minced garlic and grated ginger. Sauté for 1-2 minutes, stirring frequently, until the mixture becomes aromatic and fragrant.

Next, incorporate the miso paste and gochujang into the pot. Stir vigorously to blend the ingredients together thoroughly and allow the mixture to cook for an additional minute, enhancing the flavors.

Gradually pour in the chicken or vegetable broth, followed by the soy sauce. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and allow it to simmer for about 10 minutes, letting the flavors meld beautifully.

While the broth is simmering, prepare the ramen noodles according to the package instructions in a separate pot. After cooking, drain and set them aside, ready for your ramen masterpiece.

After the broth has simmered, add the sliced shiitake mushrooms. Let them cook in the broth for another 5 minutes, or until they become tender and flavorful.

Stir in the baby spinach, allowing it to wilt slightly in the hot broth, just until tender.

When ready to serve, place equal portions of the cooked ramen noodles into serving bowls. Ladle the steaming hot spicy miso broth over the noodles. Garnish each bowl with the tender mushrooms, halved soft-boiled eggs (if using), chopped green onions, nori strips, and a sprinkle of sesame seeds for added texture and flavor.

Relish in your delicious homemade spicy miso ramen, packed with warmth and spice!
