Ingredients
  

  • 1 pound beef chuck cut into bite-sized chunks
  • 2 tablespoons vegetable oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 4 cups beef broth
  • 1 can coconut milk 14 oz
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce optional
  • 1 tablespoon brown sugar
  • 2 large carrots sliced into thin rounds
  • 1 red bell pepper sliced into strips
  • 4 green onions chopped for garnish
  • 2 packs ramen noodles discard seasoning packets
  • to taste fresh cilantro for garnish
  • to serve lime wedges

Instructions

  • In a large skillet, heat vegetable oil over medium-high heat and sear beef chunks until browned, about 5-7 minutes. Transfer to slow cooker.
  • In the same skillet, sauté diced onion, minced garlic, and grated ginger for 3-4 minutes until onion is translucent. Add curry powder, turmeric, and cumin, stirring for 1 minute.
  • Pour the sautéed mixture over the beef in the slow cooker. Add beef broth, coconut milk, soy sauce, fish sauce (if using), brown sugar, sliced carrots, and red bell pepper. Stir well.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until beef is tender.
  • About 30 minutes before serving, add ramen noodles to the slow cooker and stir gently to submerge them in the broth. Cook until tender, about 5-7 minutes.
  • Ladle the curry ramen into bowls and top with chopped green onions and fresh cilantro. Serve with lime wedges.
