  • 1 pound boneless skinless chicken thighs, diced
  • 2 tablespoons coconut oil
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons red curry paste
  • 1 can coconut milk 14 ounces
  • 4 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 cups fresh spinach roughly chopped
  • 1 red bell pepper thinly sliced
  • 1 cup snap peas trimmed
  • 8 ounces rice noodles
  • 1 juice of fresh lime
  • fresh cilantro leaves for garnish
  • sliced green onions for garnish

Instructions

  • Heat coconut oil in a large pot over medium heat.
  • Add chopped onion and sauté for about 5 minutes until translucent.
  • Incorporate minced garlic and grated ginger, cooking for 1-2 minutes.
  • Add diced chicken thighs and cook until lightly browned, about 5-7 minutes.
  • Stir in red curry paste and cook for another 2 minutes.
  • Pour in coconut milk and chicken broth, bringing to a gentle simmer.
  • Add fish sauce and brown sugar, simmer for about 15 minutes.
  • In the last 5 minutes, add red bell pepper, snap peas, and spinach.
  • Prepare rice noodles according to package instructions and set aside.
  • Stir in lime juice before serving over rice noodles, garnishing with cilantro and green onions.
