Spicy Turkey Cauliflower Rice

1 lb ground turkey

4 cups cauliflower rice (fresh or frozen)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14 oz) diced tomatoes with green chilies

2 teaspoons chili powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup corn (frozen or fresh)

1 cup black beans, drained and rinsed

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and diced bell pepper; cook for an additional 2-3 minutes until the bell pepper softens.

      Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

        Season the turkey mixture with chili powder, smoked paprika, cayenne pepper, salt, and pepper. Stir well to combine.

          Pour in the can of diced tomatoes with green chilies, corn, and black beans. Mix everything together and let it simmer for 5 minutes.

            Add the cauliflower rice to the skillet, stirring it into the mixture until fully combined. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.

              Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh cilantro.

                Serve hot with lime wedges on the side for an extra burst of flavor.
