Spinach and Feta Quesadillas (20 minutes)

Packed with fresh spinach, creamy feta, and melty mozzarella, they’re a quick and delicious treat ready in just 20 minutes. Perfect for a quick lunch or a cozy dinner, these quesadillas are loaded with flavor and can be customized with a kick of red pepper flakes. Serve them warm with sour cream and salsa for a delightful meal that everyone will love!

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for heat

Sour cream and/or salsa for serving

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

    Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if using. Remove from heat and let cool slightly.

      Mix the Cheese: In a mixing bowl, combine the sautéed spinach mixture with crumbled feta and shredded mozzarella. Stir until well combined.

        Assemble Quesadillas: Place one tortilla on a flat surface. Spread a quarter of the spinach and cheese mixture over half of the tortilla. Fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas and filling.

          Cook Quesadillas: Wipe the skillet clean and return it to medium heat. Lightly oil the skillet if necessary. Cook each quesadilla for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and let cool slightly before slicing.

            Serve: Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.
