  • 2 boneless skinless chicken breasts

  • 4 cloves garlic minced
  • 1 lemon zest and juice
  • 1 cup cherry tomatoes halved
  • ½ cup low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

  • 8 oz burrata cheese

Instructions

  • Preheat your oven to 400°F (200°C).

  • Season chicken breasts with salt and pepper, heat 2 tablespoons of olive oil in a skillet, and cook chicken for 5-7 minutes on each side until golden brown.
  • In the same skillet, sauté minced garlic for 30 seconds, then add chicken broth, lemon juice, and zest, simmering gently.
  • Stir in butter until melted, then add drained pasta, tossing to coat in the sauce, adding reserved pasta water as needed.
  • Fold in roasted cherry tomatoes and sliced chicken.
