1 lb flank steak, thinly sliced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large russet potatoes, cut into fries or wedges

1 tablespoon cornstarch

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 cup sour cream

½ cup green onions, chopped

1 avocado, sliced

1 jalapeño, sliced (optional)

Salsa, for serving

Prepare the Steak: In a bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the sliced flank steak and toss to coat. Marinate for at least 30 minutes, or overnight in the refrigerator for deeper flavor.

    Cook the Fries: Preheat the oven to 425°F (220°C). Toss the cut potatoes with cornstarch, a pinch of salt, and pepper. Spread in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through, until crispy and golden.

      Cook the Steak: While the fries are baking, heat a skillet over medium-high heat. Add the marinated steak and cook for 3-4 minutes per side until browned and cooked to your preferred doneness. Remove from heat and let it rest for a few minutes before slicing.

        Assemble the Burritos: Lay a tortilla flat on a plate. In the center, layer a portion of the cooked fries, sliced steak, and a mix of the cheddar and Monterey Jack cheese.

          Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll it up from the bottom, tucking in the ends as you go. Repeat with the remaining tortillas and filling.

            Heat the Burritos: In the same skillet used for the steak, add a little olive oil and toast the burritos seam side down for 2-3 minutes until golden brown. Flip and toast the other side.

              Serve: Slice the burritos in half and serve with sour cream, chopped green onions, avocado, sliced jalapeños, and salsa on the side for dipping.
