12 oz penne pasta

1 lb Italian sausage (sweet or spicy, your choice)

1 tablespoon olive oil

4 cloves garlic, minced

1/2 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup bell peppers, sliced (any color)

2 cups baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Remove the casings from the Italian sausages and crumble the sausage into the skillet. Cook until browned and cooked through, approximately 6-8 minutes.

      Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, stirring frequently to avoid burning.

        In a small bowl, whisk together the honey, soy sauce, rice vinegar, and red pepper flakes. Pour this sauce over the browned sausage in the skillet, stirring to combine and coat the sausage thoroughly. Let it simmer for about 2-3 minutes until the sauce thickens slightly.

          Add the cherry tomatoes and bell peppers to the skillet, cooking for another 3-4 minutes until they start to soften. If needed, sprinkle with salt and pepper to taste.

            Stir in the cooked penne pasta and baby spinach, mixing well to combine all ingredients and coat with the sauce. Cook for an additional 2 minutes until the spinach wilts.
