Ingredients

2 cups fresh strawberries, hulled and quartered

2 cups fresh peaches, pitted and sliced (about 4 medium peaches)

1/4 cup granulated sugar

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the quartered strawberries and sliced peaches. Add the granulated sugar, lemon juice, and vanilla extract. Gently toss to coat the fruits evenly. Pour the fruit mixture into a greased 9-inch baking dish.

Make the Crisp Topping: In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Stir the dry ingredients together until evenly mixed. Then, pour the melted butter over the mixture, and stir until all the ingredients are combined and crumbly.

Assemble the Crisp: Evenly distribute the oat topping over the fruit mixture in the baking dish.

Bake: Bake in the preheated oven for 30–35 minutes, or until the topping is golden brown and the fruit is bubbly.

Serve: Let cool for a few minutes before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
