Sumac Onions

2 large red onions, thinly sliced

2 tablespoons sumac spice

1 teaspoon salt

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Cracked black pepper (to taste)

Instructions

In a large mixing bowl, combine the sliced onions and salt. Toss well to coat and let them sit for about 10 minutes. This will help to draw out some of the moisture and soften the onions.

    After the onions have marinated in salt, rinse them with cold water to remove excess salt and drain well.

      In a separate bowl, whisk together the olive oil, apple cider vinegar, lemon juice, and sumac spice until well combined.

        Add the drained onions to the bowl with the dressing and toss gently until the onions are evenly coated.

          Allow the onions to marinate for at least 30 minutes at room temperature for the flavors to meld. If you have more time, refrigerating them for a few hours enhances the flavor.

            Before serving, taste and season with cracked black pepper if desired. Top with fresh chopped parsley for garnish.
