Ingredients
  

4 cups fresh corn kernels (about 6 ears of corn)

1 cup cherry tomatoes, halved

1 red bell pepper, diced

½ red onion, finely chopped

½ cup fresh cilantro, chopped

¼ cup crumbled feta cheese (optional)

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey

Salt and pepper, to taste

1 avocado, diced (optional for garnish)

Instructions
 

Cook the Corn: If using fresh corn, bring a large pot of salted water to a boil. Add the corn cobs and cook for about 3-5 minutes until tender. Remove and let cool. Once cooled, cut the kernels off the cobs. If using frozen corn, simply blanch it in boiling water for a minute or two, then cool under cold water and drain.

    Prepare the Vegetables: In a large mixing bowl, combine the corn kernels, cherry tomatoes, red bell pepper, red onion, and cilantro. Toss gently to combine.

      Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well mixed.

        Combine Salad and Dressing: Pour the dressing over the corn and vegetable mixture. Gently toss the salad to ensure everything is evenly coated in the dressing.

          Garnish: If desired, add diced avocado on top and sprinkle with crumbled feta cheese for an extra layer of flavor.
