Sweet And Spicy Thai Chicken

Ingredients
  

1.5 lbs boneless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup fish sauce

2 tablespoons brown sugar

1 tablespoon honey

2 tablespoons lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon ginger, grated

1-2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

2 green onions, chopped (for garnish)

Fresh cilantro leaves (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

In a medium bowl, combine soy sauce, fish sauce, brown sugar, honey, lime juice, minced garlic, grated ginger, and Sriracha sauce. Whisk until the sugar is dissolved and the mixture is well combined.

    Place the chicken pieces in a zip-top bag or shallow dish, then pour the marinade over the chicken. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes to 2 hours to enhance flavor.

      Heat vegetable oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade (reserve marinade) and add it to the skillet. Sauté for 5-7 minutes until the chicken is browned and cooked through. Remove from the skillet and set aside.

        In the same skillet, add sliced red and yellow bell peppers, along with the onion. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Return the cooked chicken to the skillet along with the reserved marinade. Stir to combine and bring to a simmer. Cook for another 3-4 minutes, allowing the sauce to thicken slightly.

            Serve the sweet and spicy Thai chicken over cooked jasmine rice. Garnish with chopped green onions and fresh cilantro leaves.
