Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • ½ cup low-sodium soy sauce
  • ¼ cup packed brown sugar
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh ginger finely grated
  • 1 piece bell pepper thinly sliced
  • 1 medium onion thinly sliced
  • 1 cup pineapple chunks
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sesame oil
  • cooked rice for serving
  • chopped green onions for garnish
  • toasted sesame seeds for garnish

Instructions

  • Place the chicken thighs at the bottom of the crockpot.
  • In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, black pepper, and sesame oil until smooth.
  • Layer sliced bell pepper and onion on top of the chicken.
  • Pour the sauce over the chicken and vegetables, then add pineapple chunks on top.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Shred the chicken in the crockpot using two forks.
  • Serve the mixture over cooked rice and garnish with green onions and sesame seeds.
