Ingredients
  

  • 4 medium sweet potatoes peeled and sliced thinly
  • 1 cup fresh or frozen cranberries
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter plus extra for greasing
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste
  • Fresh thyme leaves for garnish optional

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter.
  • In a large bowl, combine the sweet potatoes and cranberries, seasoning with salt, pepper, cinnamon, and nutmeg.
  • In another bowl, whisk together the heavy cream and brown sugar until smooth.
  • Layer half of the sweet potato and cranberry mixture in the baking dish, followed by half of the cream mixture and half of the Gruyère cheese.
  • Repeat the layering process with the remaining ingredients.
  • Sprinkle the top with grated Parmesan cheese and add dollops of butter.
  • Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 20-25 minutes until golden.
  • Allow to cool for a few minutes before serving, garnishing with fresh thyme if desired.
