Ingredients
  

  • 1 cup brown rice uncooked
  • 1 lb ground turkey or lean beef
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 1 cup diced tomatoes fresh or canned
  • 1 cup shredded lettuce
  • 1 whole avocado diced
  • ½ cup shredded cheese cheddar or Mexican blend
  • ¼ cup salsa
  • fresh cilantro for garnish optional
  • lime wedges for serving

Instructions

  • Cook the rice by combining 1 cup of brown rice with 2 cups of water in a saucepan, bring to a boil, then simmer for 45 minutes.
  • In a skillet, heat medium heat and cook the ground turkey or beef for 5-7 minutes until browned.
  • Sprinkle taco seasoning over the cooked meat and add ¼ cup of water, stirring to combine and simmer for 3-5 minutes.
  • Add rinsed black beans, corn, and diced tomatoes to the skillet, stirring and cooking for an additional 3-4 minutes.
  • In serving bowls, layer fluffy brown rice as the base, topped with the taco meat mixture.
  • Add shredded lettuce, diced avocado, and a sprinkle of shredded cheese on top.
  • Drizzle salsa over each bowl and garnish with fresh cilantro if desired, serving lime wedges on the side.
