rinsed and drained

packet taco seasoning

Instructions
Cook the rice by combining 1 cup of brown rice with 2 cups of water in a saucepan, bring to a boil, then simmer for 45 minutes.
In a skillet, heat medium heat and cook the ground turkey or beef for 5-7 minutes until browned.
Sprinkle taco seasoning over the cooked meat and add ¼ cup of water, stirring to combine and simmer for 3-5 minutes.
Add rinsed black beans, corn, and diced tomatoes to the skillet, stirring and cooking for an additional 3-4 minutes.
In serving bowls, layer fluffy brown rice as the base, topped with the taco meat mixture.
Add shredded lettuce, diced avocado, and a sprinkle of shredded cheese on top.
Drizzle salsa over each bowl and garnish with fresh cilantro if desired, serving lime wedges on the side.
