1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 cup shredded romaine lettuce

1 avocado, diced

½ cup sliced green onions

¼ cup fresh cilantro, chopped

1 cup shredded cheddar cheese

½ cup tortilla strips (for garnish)

For the Dressing:

¼ cup olive oil

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, salt, and pepper until well combined. Set aside for the flavors to meld.

Chop the Vegetables: In a large mixing bowl, combine the diced chicken, black beans, corn, cherry tomatoes, red bell pepper, romaine lettuce, avocado, green onions, and cilantro. Toss gently to mix the ingredients without mashing the avocado.

Add the Cheese: Sprinkle the shredded cheddar cheese over the salad mixture.

Dress the Salad: Drizzle the prepared dressing over the salad and toss gently to coat the ingredients evenly with the dressing.

Serve: Divide the salad into serving bowls or plates. Top with a handful of tortilla strips for crunch and additional cilantro if desired.

Enjoy: Serve immediately and enjoy the fresh, zesty flavors of your Tex-Mex Chopped Chicken Salad!
