Thai Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon olive oil (or sesame oil)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 cup shiitake mushrooms, finely chopped

1 carrot, grated or finely shredded

1/4 cup green onions, sliced

1/4 cup fresh cilantro, chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon fish sauce

1 tablespoon hoisin sauce

1 tablespoon lime juice

1 teaspoon chili garlic sauce (adjust to taste)

1 head of butter or iceberg lettuce, leaves separated for wrapping

Crushed peanuts and extra cilantro for garnish (optional)

Instructions
 

Heat the Oil: In a large skillet, heat the olive or sesame oil over medium heat.

    Cook Chicken: Add the ground chicken and cook, breaking it apart, until browned and fully cooked, about 5-7 minutes.

      Sauté Aromatics: Add the minced garlic and ginger to the skillet and sauté for about 1 minute until fragrant.

        Add Vegetables: Stir in the diced red bell pepper, shiitake mushrooms, and grated carrot. Cook for another 3-4 minutes until the vegetables are slightly softened.

          Flavor it Up: Add the green onions, cilantro, soy sauce, fish sauce, hoisin sauce, lime juice, and chili garlic sauce. Stir well to combine all ingredients and let it simmer for 2 minutes to meld the flavors together.

            Prepare Lettuce Wraps: Take a lettuce leaf, spoon a generous amount of the chicken mixture into the center, and fold or wrap it up like a taco.

              Garnish and Serve: Top each wrap with crushed peanuts and additional cilantro if desired. Serve immediately with lime wedges on the side.
