  • 2 cups vegetable broth
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1 whole bell pepper
  • ½ medium red onion
  • 1 ripe avocado
  • ½ cup feta cheese
  • ¼ cup fresh parsley
  • ¼ cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
