1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: whipped cream, fresh berries, chocolate syrup, maple syrup

Instructions
 

In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. It’s okay if there are a few lumps; do not overmix.

        Fold in the chocolate chips, ensuring an even distribution throughout the batter.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little melted butter.

            For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges begin to look set, about 2-3 minutes.

              Flip the pancakes and cook for another 2-3 minutes on the other side until cooked through and fluffy.

                Remove from the skillet and keep warm. Repeat with the remaining batter, greasing the skillet as needed.
