Ingredients
  

  • 1 cup tiger nuts soaked in water for a minimum of 12 hours
  • 5-6 Medjool dates pitted
  • 2 cups fresh water
  • 1 zest of orange
  • 1 juice of orange
  • 1 zest of lemon
  • 1 juice of lemon
  • 1 teaspoon vanilla extract optional
  • a pinch sea salt
  • optional toppings: ground cinnamon nutmeg, or chia seeds

Instructions

  • Soak the tiger nuts in water for at least 12 hours or overnight.
  • Drain and rinse the soaked tiger nuts under cold water.
  • Blend the soaked tiger nuts, pitted Medjool dates, and 2 cups of fresh water until smooth.
  • Strain the blended mixture into a large bowl using a nut milk bag or fine mesh sieve.
  • Add orange zest, orange juice, lemon zest, lemon juice, vanilla extract, and sea salt to the strained milk.
  • Stir thoroughly to combine all ingredients.
  • Taste the milk and adjust sweetness with more pitted dates or sweetener if desired.
  • Chill the milk in the refrigerator for at least 30 minutes before serving.
  • Serve over ice or straight, garnished with optional toppings.
