2 cups cherry tomatoes, halved

1/4 cup finely chopped red onion

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/3 cup sugar

1 tsp fresh thyme leaves

1 baguette, sliced into 1/2-inch thick pieces

1/2 cup goat cheese or cream cheese

Fresh basil leaves for garnish

Extra virgin olive oil for drizzling

Prepare the Tomato Jam: In a medium saucepan, combine the halved cherry tomatoes, chopped red onion, minced garlic, balsamic vinegar, sugar, thyme, salt, and pepper. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil.

    Simmer the Mixture: Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally, until it thickens and becomes jam-like in consistency. Remove from heat and allow it to cool.
