12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup bell peppers (mix of colors), diced

1/2 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp Italian seasoning

Salt and pepper to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool down.

    Prepare the Vegetables: While the tortellini is cooking, wash and chop the cherry tomatoes, cucumber, red onion, bell peppers, and olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled tortellini, chopped vegetables, feta cheese, and basil leaves.
