Traditional Egyptian Koshari

Ingredients
  

1 cup brown lentils, rinsed

1 cup rice (long-grain or basmati)

1 cup elbow macaroni

1 large onion, thinly sliced

4 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon coriander powder

1 can (14 oz) diced tomatoes

1 tablespoon tomato paste

2 tablespoons olive oil

4 cups vegetable broth or water

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

Tahini sauce or hot sauce for serving (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Lentils: In a medium saucepan, combine 3 cups of water and the rinsed lentils. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and set aside.

    Prepare the Rice: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the rice and stir occasionally for about 2-3 minutes. Add 2 cups of vegetable broth or water and a pinch of salt. Cover and cook on low heat for about 15 minutes or until rice is fluffy and liquid is absorbed. Set aside.

      Cook the Macaroni: In a pot of boiling salted water, cook the elbow macaroni according to package instructions. Drain and set aside.

        Make the Tomato Sauce: In a skillet, heat the remaining tablespoon of olive oil. Add the sliced onions and sauté until golden brown (about 10 minutes). Stir in the minced garlic, cumin, coriander, and red pepper flakes (if using), and cook for another minute.

          Combine the Base: Add the diced tomatoes and tomato paste to the skillet. Simmer for about 5-7 minutes, allowing the flavors to blend. Season with salt and pepper to taste.

            Assemble the Koshari: In a large serving dish or bowl, layer the cooked rice, followed by the lentils, macaroni, and finally the tomato sauce on top.

              Garnish and Serve: Drizzle with tahini sauce or hot sauce if desired. Sprinkle with fresh chopped parsley before serving.
