  • 2 ripe mangoes peeled and diced
  • 1 cup creamy coconut milk
  • ½ cup unsweetened shredded coconut
  • ¼ cup honey or agave syrup
  • 1 tablespoon freshly squeezed lime juice
  • ¼ teaspoon sea salt
  • fresh mint leaves for garnish
  • ½ cup diced pineapple optional

Instructions

  • Peel and dice the mangoes into bite-sized pieces.
  • If using, dice the pineapple into similar-sized pieces.
  • In a mixing bowl, combine the diced mangoes and pineapple.
  • In a separate bowl, whisk together coconut milk, honey or agave syrup, lime juice, and sea salt until smooth.
  • Pour the coconut milk mixture over the diced fruits and gently toss to coat.
  • Sprinkle shredded coconut over the fruit and fold it in gently.
  • Cover the bowl and refrigerate for at least 30 minutes.
