Turkey Breakfast Patties with Avocado and Egg

1 pound ground turkey

1/4 cup finely chopped onion

1/4 cup breadcrumbs (preferably whole wheat)

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)

2 ripe avocados, halved, pitted, and sliced

4 large eggs

Fresh cilantro or parsley (for garnish)

Lime wedges (for serving)

Instructions
 

In a large bowl, combine the ground turkey, finely chopped onion, breadcrumbs, minced garlic, oregano, smoked paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Shape the turkey mixture into 8 equal-sized patties, about 1/2 inch thick.

      Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the turkey patties in batches, cooking for about 5-6 minutes on each side or until they are fully cooked through (internal temperature should reach 165°F).

        While the patties are cooking, in a separate non-stick skillet, cook the eggs sunny-side up or to your preferred doneness.

          To assemble, place a turkey patty on a plate, top with a few slices of avocado, and gently place a cooked egg on top.

            Garnish with fresh cilantro or parsley, and serve with lime wedges on the side for an extra zing.
