1 lb ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp onion powder, salt & pepper)

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 large head of romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup shredded cheddar cheese

1/4 cup cilantro leaves, chopped

1/4 cup sour cream or Greek yogurt (optional)

Tortilla chips (for crunch)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.

    Stir in the minced garlic and ground turkey. Cook until the turkey is browned and cooked through, about 5-7 minutes.

      Drain any excess fat, if needed, then sprinkle the taco seasoning over the turkey mixture. Add a splash of water (about 1/4 cup) to help mix the seasoning and stir until well combined. Let simmer for another 2-3 minutes.

        In a large mixing bowl, combine the chopped romaine, black beans, corn, cherry tomatoes, diced avocado, and cilantro. Toss gently to combine.

          To serve, divide the salad mixture among serving bowls. Top each bowl with the seasoned turkey, shredded cheese, and a dollop of sour cream or Greek yogurt if desired.

            Crush some tortilla chips and sprinkle them on top for added crunch. Serve with lime wedges on the side for a fresh squeeze.
