Tuscan Chicken Pasta Recipe

12 ounces fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Red pepper flakes, optional for heat

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same skillet, add the minced garlic and dried Italian herbs. Sauté for about 30 seconds, until fragrant.

        Add Sun-Dried Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes and cook for another 2 minutes. Add the chopped spinach and cook until wilted.

          Make the Sauce: Lower the heat and pour in the heavy cream. Stir well and bring to a simmer. Add the grated Parmesan cheese and stir until the sauce is creamy and slightly thickened. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

            Combine: Add the cooked chicken and fettuccine to the skillet, tossing everything together until well combined. Adjust seasoning with more salt, pepper, and, if desired, red pepper flakes for some heat.
