2 cups mixed leafy greens (spinach, arugula, and kale)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), chopped

1/2 red onion, thinly sliced

1 avocado, diced

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, chopped

1/4 cup feta cheese (optional)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

In a large salad bowl, combine the mixed leafy greens, cherry tomatoes, cucumber, bell pepper, red onion, and diced avocado.
