Ingredients
  

1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons granulated sugar

1 tablespoon vanilla extract

¼ teaspoon salt

2 tablespoons melted butter (plus extra for cooking)

Optional toppings: fresh fruit, whipped cream, chocolate sauce, or powdered sugar

Instructions
 

In a mixing bowl, whisk together the flour, sugar, and salt until well combined.

    In a separate bowl, beat the eggs and then add the milk and vanilla extract. Stir until mixed.

      Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth and free of lumps.

        Stir in the melted butter and let the batter rest for about 30 minutes at room temperature.

          Heat a non-stick skillet over medium heat and add a small pat of butter to coat the surface.

            Pour about ¼ cup of the batter into the skillet, quickly swirling to cover the bottom evenly.

              Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden.

                Carefully flip the crepe using a spatula and cook the other side for an additional 30 seconds to 1 minute.

                  Transfer the cooked crepe to a plate and keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.

                    Serve the crepes warm with your choice of toppings such as fresh fruit, whipped cream, or a drizzle of chocolate sauce.
