8 oz feta cheese, crumbled

1/4 cup plain Greek yogurt

2 tablespoons olive oil, plus extra for drizzling

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

1 French baguette, sliced into 1/2-inch rounds

1 cup cherry tomatoes, diced

1/4 cup fresh basil leaves, chopped

Balsamic glaze, for drizzle (optional)

Instructions
 

Prepare the whipped feta: In a medium mixing bowl, combine the crumbled feta cheese, Greek yogurt, olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Using an electric mixer or food processor, blend until the mixture is creamy and smooth. Taste and adjust seasoning if needed.

    Toast the baguette: Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast in the preheated oven for about 8-10 minutes, or until golden and crispy.

      Mix the tomato topping: In another bowl, combine the diced cherry tomatoes, chopped basil, a drizzle of olive oil, salt, and pepper. Mix well and set aside.

        Assemble the bruschetta: Once the baguette slices are toasted, remove them from the oven. Spread a generous dollop of the whipped feta mixture onto each slice. Top with a spoonful of the tomato and basil mixture.
