White Bean and Pesto Bake

Ingredients
  

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup homemade or store-bought basil pesto

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon lemon juice

Salt and pepper, to taste

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the drained white beans, chopped spinach, minced garlic, and halved cherry tomatoes. Drizzle with olive oil and lemon juice, then season with salt and pepper. Gently mix everything together until well incorporated.

      Add the pesto to the bean mixture and stir until the beans and vegetables are well coated.

        Transfer the mixture to a greased baking dish. Spread it out evenly across the dish.

          Top the mixture with shredded mozzarella and grated Parmesan cheese, covering it completely.

            Bake in the preheated oven for about 25-30 minutes, or until the cheeses are melted and bubbly, and the top is slightly golden.

              Once baked, remove from the oven and let it cool for a few minutes before serving. If desired, garnish with fresh basil leaves for an extra pop of flavor and color.
