  • 1 pound Italian turkey sausage
  • 4 cups low-sodium chicken broth
  • 3 medium Yukon Gold or red potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups fresh kale
  • 1 cup unsweetened almond milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • Optional: freshly grated Parmesan cheese for serving

Instructions

  • Brown the Italian turkey sausage in a skillet over medium heat, breaking it into small crumbles.
  • Drain excess fat and transfer the sausage to the slow cooker.
  • Sauté chopped onion and minced garlic in the same skillet for 2-3 minutes until fragrant.
  • Add the onion and garlic mixture to the slow cooker with the sausage.

  • Stir in chopped kale and almond milk 30 minutes before serving.
  • Allow the soup to cook for an additional 30 minutes on low.
